New Hooba Vegan Harissa Kofta

Ingredients   
Method

8 x Harissa Style Sausages.

1Tsp Olive Oil. 

1 x Red Onion (Chopped).

1/2 Pomegranate (Deseeded). 

4 x Lebanese Flatbread 

100ml Coconut Milk.

2tbsp Mint Sauce. 

1/4 Cucumber (Deseeded and Finely Diced).  

100g Quinoa.  

200ml Veg Stock

  1. Remove the skins from the Harissa meat free sausage, and form into 16 small kotfas, place onto an oven proof tray and bake in an oven at 180C for 15 mins
  2. Meanwhile heat up the vegetable stock and bring to the boil, place the quinoa into a boil, add the stock and the olive oil and cling film until cool.
  3. Stir the quinoa and add the cucumber, onion & pomegranate seeds and mix.
  4. To make the dressing mix the coconut milk and the mint sauce.
  5. Place the flat breads on 4 plates, place on the quinoa salad and the breads and then 4 pieces of Kofta on each bread, spoon on the dressing & serve.
